Recipe "Eclairs with cream of butter and condensed milk"

Step 1/13
Pour water into a saucepan and put butter there for the dough.

Put on heat, add salt, mix. Heat until almost boiling.

Sift the flour into a bowl. As soon as the oil boils with water, pour flour there and start actively stirring right on the stove, heating until the dough starts to fry (a film should form at the bottom of the saucepan). Stir the dough intensively with a spatula all the time. Once the dough is ready, transfer it to the bowl of the mixer.

Break the eggs into a bowl and shake with a fork.

Place a spatula nozzle on the mixer and start kneading the dough. Add the eggs little by little and continue kneading.

If the dough is too thick, you can add another half eggs. The consistency of the dough should be like toothpaste.

Insert the star nozzle into the confectionery bag.

Transfer the dough to a bag with a nozzle.

Line a baking tray with baking paper and preheat the oven to 220 ℃. Press strips of dough on a baking sheet at some distance from each other. Bake in an oven preheated to 220 ℃ for 20 minutes, then turn down the heat to 160 ℃ and cook for 15 minutes. Until the eclairs are ready, do not open the oven!

While the eclairs bake, make the cream. Place the softened butter in the bowl of a mixer. Install the whisk attachment and beat the butter until fluffy. Add a little condensed milk, in parts, and continue to beat until fluffy and homogeneous. Vanillin, vanilla sugar, orange or lemon zest, chopped nuts, etc. can also be added to the cream.

Transfer the finished cream to a pastry bag.

Cut the finished eclairs in half, fill with cream.
