Recipe "Pavlov's cake with berries"
Ingredients for 3-4 servings
chicken egg (protein only)
2 pcs.
icing sugar
150 g
vinegar
1/4 tsp
corn starch
1/2 tsp
cream 33%
200 ml
passion fruit puree
20 ml (optional)
berries
100 g
Step 1/7
Separate the whites from the yolks. Yolks will not be needed.
Step 2/7
To beat, you need a large, necessarily clean and dry bowl and a mixer with whisks (a blender with knives is not suitable). Whisk the whites with a drop of vinegar until fluffy and firm.
Step 3/7
Pour in the icing sugar and starch and whisk until firm and glossy for a few more minutes.
Step 4/7
Cover the baking sheet with parchment. For convenience, draw circles of the desired diameter on parchment and put the protein mass on them using a spoon or a confectionery bag. In our example, we got 3 fairly high baskets about 12 cm in diameter.
Step 5/7
Put the cakes in the oven preheated to 130 ° C for 10 minutes, then turn down the heat to 60 ° C and bake for another 50 minutes until dry. Cool the finished meringues. You can immediately fill them with cream and berries and serve, or you can store them in a dry, cool place for 2-3 days.
Step 6/7
Beat cold cream (from the refrigerator) until fluffy. Add 1 tbsp. a spoonful of powdered sugar, beat for another minute, at the end add a little passion fruit puree and mix. Passion fruit gives a little sourness and aroma, but without it, the dessert will also be tasty.
Step 7/7
Fill the meringues with cream, put different berries on top and serve immediately.
