Ingredients for 4 servings

cod fillet piece skinless
500 g
butter
100 g
chicken egg
4 pcs.
lemon
1 pc.
olive oil
1 tbsp. spoon
parsley
a few twigs
thyme
2-3 sprigs
sugar
pinch
salt
to taste

Thaw the cod in advance. Rinse, dry and salt, cut into portions.

Separate the whites from the yolks, no whites are needed for this dish. Mix the yolks with 4 tbsp. tablespoons of water and squeeze out a teaspoon of lemon juice. Add a pinch of salt and sugar, stir with a whisk.

Make a water bath, put a bowl of yolks on it and beat actively with a whisk. When the yolks thicken, remove from the water bath.

Add the butter to the hot sauce and stir.

Place the cod on a parchment-lined baking sheet, drizzle lightly with olive oil and sprinkle over the thyme leaves. Add the lemon circles. Preheat the oven to 190C and bake the fish for about 15 minutes until tender.

Put the fish on plates, pour over the sauce, sprinkle with chopped parsley.
