Bright, unusual and healthy salad - well suited as a light snack. Salad is rich in vegetable protein, contains healthy vegetable fats and, importantly, looks great on the table.

Recipe "Salad with pumpkin and lentils "
Ingredients for 1-2 portions
pumpkin
200 g
lentil
40 g
leeks (white part)
1 stem
walnuts
25 g
parsley
small bundle
olive oil
1 tsp
Greek yogurt
100 ml
turmeric
½ tsp
salt
Step 1/4
Rinse the lentils and boil until tender, drain the water.
Step 2/4
Dice the pumpkin, drizzle with olive oil, cover with foil and bake in the oven until tender (you can also fry the pumpkin in a pan).
Step 3/4
Cut the leeks into thick rings and fry in a little olive oil.
Step 4/4
Combine the pumpkin, lentils and leeks, salt, add the chopped walnuts and parsley, pour over the yoghurt and sprinkle with a pinch of turmeric. Bon appetit!
