Ingredients for 2 servings

water

pumpkin peeled in IV

peeled pine nuts
2 tbsp. spoons
parsley
1 bunch
ground nutmeg
1 tsp
extra virgin olive oil
1 tsp

Mix the flour with salt. Make a well in the centre of the slide and add the olive oil, then the water. Start gently mixing the flour with water with a spoon or fork, then with your hands. The dough should turn out soft, if necessary, add water. Thoroughly knead the dough with your hands so that it becomes smooth and elastic, it will take 8-10 minutes. Wrap the dough in a film and put in the refrigerator for half an hour.

Preheat the oven to 200 ° C. Cut the pumpkin at random, season with salt, pepper, olive oil and nutmeg. Bake for 20-25 minutes until soft and ruddy.

Mash the finished pumpkin with a mashed fork or use a blender. Finely chop the parsley and mix with the pumpkin.

Brown pine nuts in a dry pan for a few minutes, watch carefully so that they do not burn out.

Remove the dough from the refrigerator, roll out into thin sheets using a dough machine or a regular rolling pin. Lasagne dough can be garnished with parsley leaves. Roll out the dough quite thinly, then put the parsley leaves on one layer (remove the thick pieces of stems) and cover with a second layer of dough. Now roll out two layers with leaves - and you get one lasagne leaf with parsley. Cut the dough into serving sheets. Boil in boiling salted water for 2-3 minutes.

Collect homemade lasagne - put part of the pumpkin puree on the bottom of the plate, then the lasagne leaf, then again the puree, and so several layers. Add the pine nuts and drizzle with olive oil.
