This recipe is a foundation that's easy to change to suit your preferences or the foods you have in your fridge. Swap the duck for chicken or prawns, add shiitake mushrooms or sprinkle the noodles with salted peanuts instead of sesame. It will be delicious anyway!

Recipe for Duck Udon Noodles
Ingredients for 2-3 servings
wheat noodles
200 g
duckling breast fillet
2 pcs.
onions
1 pc.
bell pepper
1 pc.
carrots
1 pc.
sauce "Chili Sweet"
30 ml
soy sauce
60 ml
ground ginger
3 g
ground paprika
2 g
corn starch
20 g
ground coriander
2 g
sesame
10 g
onion green
1 stem
vegetable oil for frying

Step 1/7
Slice the onions, carrots and bell peppers into thin strips.
Step 2/7
Heat the vegetable oil in a frying pan and fry the vegetables to a crust over a high heat for 2 minutes. Remove them from the pan.

Remove skin from duck breast. Cut the fillets into strips.
Step 4/7
Roll the fillets in the spices and then in the cornstarch.
Step 5/7
Chop the duck skin finely if desired, put in a wok or frying pan and fry until fat is released. Remove the skin, lay out the duck and fry until golden brown. You can simplify this step and use vegetable oil instead of fat.
Step 6/7
Combine the duck with the vegetables. Top with the boiled al dente noodles. Add soy sauce, Chili Sweet sauce and mix.
Step 7/7
Garnish the finished dish with sesame seeds and chopped green onions.
