But let's take a little liberty: instead of traditional homemade noodles, which are prepared specifically for lagman, let's take udon. This noodle is quite suitable for lagman, and it will speed up and simplify the cooking process for us .

Ingredients for 6 servings

Step 1/10
Peel the onions and carrots, cut into cubes. Fry in vegetable oil in a saucepan in which you will cook the soup.

Cut the lamb into pieces.

Add onions and carrots to the pan and fry everything together for 2-3 minutes.

Dice the bell peppers. Add to the pan to meat and vegetables, put tomato paste. Fry everything for about a minute, then add the spices.

Cut the tomato and celery into cubes. Peel the garlic, remove the core and grind. Cut off a piece of hot pepper of the desired size (the larger, the spicier the soup).

Add vegetables to the pan, salt.

Pour in 1.5-2 litres of water, bring to a boil. Turn down the heat and cook for 30-35 minutes.

Boil the udon separately in boiling water until tender .

Transfer the finished noodles to cold water, store until served (throughout the day).

Before serving, put the noodles in plates, pour over hot soup. Serve with crushed cilantro.
