Recipe "Fried quail with nut sauce"
Ingredients for 2-4 servings

vegetable oil
1-2 tbsp. spoons
salt
to taste
ground black pepper
to taste
For the sauce:
cashew
80-100g
lemon juice
1 tsp
sesame
2 tbsp. spoons
wine vinegar
1 tsp
olive oil
4-5 tbsp. spoons
garlic
1 clove
caraway seeds
pinch
turmeric
0.5 tsp
sesame oil
1 tbsp. spoon
salt

Step 1/6
Wash quail, clean from the inside, dry. Cut on one side and arrange the carcasses as if you were cooking tobacco chickens. Combine salt, pepper and vegetable oil and rub quail with this mixture.

Preheat the grill pan, put quail on it skin down.

Set the oppression: cover with a heat-resistant plate or cast-iron lid, and weigh down the top with a saucepan, large stone or other weighty stable object.

Fry for 10 minutes until ruddy, then turn over and cook for a further 10 minutes. Once cooked, place on a paper towel to drain any excess fat.

Put sesame seeds, nuts in a blender, add garlic, lemon juice, vinegar, turmeric, cumin, sesame and olive oil. Stir until smooth. If it is too thick, you can add more oil. Salt and punch all together before connecting the components.

Serve ready-made quail with sauce.
