Vegan Vegetable Protein Pate Recipe
Ingredients for 4 servings
soybean vegetable protein
150g (1 pack)
onions
1 pc. (70-80 g)
garlic
2 cloves
carrots
1 pc (100g)
dried tomatoes
5-6 pcs.
pitted kalamata olives
6-7 pcs.
capers
1 tbsp. spoon
olive oil for frying
2 tbsp. spoons
salt
to taste
parsley
a couple of twigs
breadsticks
for filing
Step 1/7
Pour boiling water over the vegetable protein for about 15 minutes to swell.
Step 2/7
Wash and peel the carrots, onions and garlic. Roughly chop.
Step 3/7
Preheat a frying pan with olive oil, put carrots, onions and garlic in it and fry, stirring occasionally, over medium heat for 5-7 minutes.
Step 4/7
Put the swollen vegetable protein in a colander, squeeze with your hands or leave to glass the liquid. Place in a pan with the onions and carrots. Warm everything together over medium heat for 5-7 minutes, not forgetting to stir. Let cool slightly.

Put the protein and vegetables in the bowl of a combine harvester or blender and chop until smooth. Do not use a vacuum blender to grind hot ingredients! Better a regular blender or combine is safer.
Step 6/7
Add the cured tomatoes, olives, capers to the bowl of a combine harvester or blender and punch again until smooth. You can also add a pinch of paprika, nutmeg, black pepper to this pate.
Step 7/7
Put in a bowl, salt to taste and garnish with finely chopped parsley. Serve with breadsticks.
