Vegan tofu cheesecakes are, of course, toffees. We suggest frying them in coconut oil for a brighter taste, and adding chopped pistachios and dried cherries inside. But you can experiment with tastes and put any nuts and dried fruits, lemon or orange zest and even pieces of chocolate in such cheesecakes.

Recipe "Vegan cheesecakes (tofniki) with cherries and pistachios "
Ingredients for 4 servings
tofu classic
300g
rice flour
3 tbsp. spoons
pitted dried cherries
1 tbsp. spoon
pistachios
30 g
lemon juice
1 tsp
fresh mint
1 sprig
coconut oil
2 tsp
Step 1/6
Finely grate the tofu.
Step 2/6
Peel pistachios, chop. Chop the cherries with a knife.
Step 3/6
Mix the grated tofu with flour, add a teaspoon of lemon juice, pistachios and cherries. Stir.
Step 4/6
Form balls from the resulting mass.
Step 5/6
Fry in coconut oil until golden (7-10 minutes over medium heat). When frying, add a sprig of mint directly to the oil, so the toffees are more fragrant.
Step 6/6
Vegan cheesecakes are ready. And if there is no time for cooking, there are also toffniki on the store's Cafe menu.
