Recipe "Pumpkin-apple gluten-free cupcakes"

Pumpkin
500 g
Apple
250 g
Eggs

Rice flour
160 g
Sweetener
to taste
Spices: vanillin, cinnamon, orange aroma oil
to taste
Soda
0.5 tsp
Citric acid
0.5 tsp

Step 1/8
Wash the pumpkin and apple, clean, cut into cubes.
Step 2/8
Place pumpkin cubes in a grinder and grind.
Step 3/8
Add cubes of apples to the grinder and grind along with the pumpkin.

Separately, in another bowl, beat eggs, rice flour, vanillin, soda + citric acid, sweetener (I have a drop of stevia, you can also take Jerusalem artichoke syrup or date syrup, but then more flour may be needed).

Add chopped pumpkin and apple to the dough and mix.

After stirring, add cinnamon (1 tsp) and orange aroma oil (2-3 drops) or orange zest).

Transfer the dough to muffin moulds, pre-oiled with butter. Then put in a preheated oven, bake at 180 degrees for 15-20 minutes.

Once ready, remove from the oven, allow some time to cool and can be served for tea. about the desire can be sprinkled with coconut chips. Bon appetit!
