Squeeze the juice out of the citrus.

Beat the proteins with sugar to stable peaks, gently mix with the juice, pour the resulting mixture into a container and freeze. Such ice cream will turn out to be harder than store ice cream. In order to make softer ice cream, you can use ice cream or beat the mixture again after 2-3 hours in the freezer, and then freeze again.

For the topping, cut the oranges into neat, film-free wedges. Place in a frying pan, squeeze the juice from the rest of the orange, add the sugar and warm for about 5-7 minutes over medium heat. Topping is ready. Pour the orange syrup over the sherbet and serve!
