The classic Italian recipe for tiramisu involves the use of raw yolks. If you are afraid to eat eggs without heat treatment, you can beat the cream in a water bath to warm up the yolks.

Ingredients, serves 8
mascarpone
500g (2 jars)
Cookies French sticks

chicken egg (yolks only)
6 pcs.

Step 1/9
Wash the eggs thoroughly, carefully separate the whites from the yolks. Proteins in this recipe are not useful, you can make a meringue or a protein omelet from them.

Beat the yolks with sugar into a light fluffy homogeneous mass using a mixer with a whisk attachment. A bowl of yolks can be placed on a pan of boiling water to beat in a water bath for greater safety, but once beaten, the cream must be removed from the water bath immediately.

Add mascarpone to the beaten yolks and beat again.

Make coffee. Traditionally, a little Marsala fortified wine is added to coffee for impregnation, but you can also use amaretto or even cognac, or you can do without alcohol.

Put some cream in a suitable deep enough shape. Quickly dip cookies in coffee and spread in a row.

It is important not to keep the cookies soaked for too long, 2-3 seconds is enough, otherwise the dessert will end up too liquid.

Put about half the cream on top of the cookies, then put a row of sticks again, be sure to cross the previous ones. Lay out the remaining cream and spread evenly. Sprinkle the dessert with cocoa powder through a strainer.

Tighten the mold with a film or close it tightly and put it in the refrigerator for 3-4 hours for infusion.
