Recipe " Kharcho Soup"
Ingredients for 6 servings
Beef brisket n.k.
500 g
Tomatoes peeled in their own juice
1 can (750g)
Polished round grain rice
100 g
Walnuts
60 g
Onions
2 pcs.
Tkemali sauce
80 g
Garlic
4 cloves
Coriander
1/2 tsp
Ground black pepper
pinch
Lemon juice
1-2 tbsp. spoons
Salt
to taste
Vegetable oil for frying
1 tbsp. spoon
Cilantro

Step 1/5
Peel and dice the onion. Fry the beef in vegetable oil right in the pan. Add the onion and spread until clear.

Add all the contents of a jar of tomatoes (mash the tomatoes themselves with a fork), salt and spices. If you have khmeli-suneli, be sure to put it too. Pour in 3-3.5 litres of water, bring to the boil and cook for 40-45 minutes.

Pour the rice into the soup, add the tkemali and cook until the rice is cooked (about 20 minutes).

Punch the nuts in a blender along with the garlic and a dollop of lemon juice. At this stage, you can add a little more hops-sunels for balance of taste.

Try, if necessary, add a little sugar or lemon juice. Add ground walnuts, warm for another 5 minutes. When serving, add chopped cilantro.
