Ingredients for 2-3 servings

eggplant
1 pc.
bell pepper
1 pc.
curd cheese "Creamy"
1 pack (140g)
Grass salad mix
1 pack (65g)
orange
0.5 pcs (juice only)
garlic
1 clove
olive oil
2 tbsp. spoons
salt
to taste
freshly ground black pepper
to taste

Cut the eggplant into cubes, salt and leave under the load for 10 minutes to release the juice - this way it will absorb less oil when frying.

Step 2/4
Dice the bell peppers and fry with the aubergine until cooked through in olive oil. Crush garlic with your palm, fry with vegetables so that it gives away its aroma.

Rinse the salad, dry and put in a salad bowl, next to the fried cubes of pepper and eggplant. Using curd cheese, make knels with two spoons and lay beautifully on the greens.

For the dressing, mix the juice of half an orange with a tablespoon of olive oil and a pinch of salt, beat with a fork and pour over the salad.
