Recipe "Mint Eggplants"

Ingredients for 2-3 servings

eggplants
3 pcs.
mint
a few twigs
garlic
1-2 cloves
lemon
1 pc.
brown sugar
pinch
salt
sesame or olive oil

Step 1/3
Eggplant for this recipe can be prepared in two ways - in a steamer or bake. In the first version, peel the eggplants and cut into blocks, roll in salt and leave for 10 minutes under a small load, then drain the liquid and steam the blocks until tender - 10-15 minutes.

In the second version, simply prick the skin of the eggplants with a fork and bake whole in a hot oven until cooked - 15-20 minutes, then quickly remove the skin and cut the flesh, in this case, neat blocks may not work, but the taste will be excellent!
Step 3/3
For the marinade, zest the lemon and squeeze out the juice, mix with salt, sugar, crushed garlic and chopped mint, pour this mixture over the aubergines and leave for an hour or more, taste the finished aubergines, adjust the amount of salt (if too acidic, you need to salt) and serve, garnishing with mint leaves.
