Rinse bulgur and fill with cold water.

Cut the aubergines in half, without cutting off the tails, brush with olive oil, put on a baking sheet cut down and bake in the oven at 180 degrees for about half an hour until soft.

While the aubergines are baking, cut the onion into thin half rings, add the jeera and fry in olive oil until golden, pour in the hot pepper and turmeric, drain the bulgur and add to the onion in the pan, fry for two to three minutes.

Dilute the tomato paste with water (about 150 ml) and pour into the pan, stir, salt well, so that there is enough salt for the minced meat, cook for another 10 minutes until the water evaporates.

Add minced meat, cook for another 5 minutes, stirring with a spatula, turn off the heating.

Remove the zest from the lemon and squeeze about a tablespoon of juice (or use a salted lemon, if available, cut half of the whole into cubes). Finely chop the parsley and mint leaves, pass the garlic through the garlic dressing. Add lemon, herbs and garlic to minced meat, mix .

Turn the finished eggplants upside down, slightly mash the pulp with a spoon, trying not to damage the skin, put the minced meat on the eggplants and bake for about 20 minutes. Done! Serve dusted with chopped greens .
