Recipe "Chicken souffle"

chicken breast fillet
400 g
small carrots

bay leaf

300-400 ml
wheat flour
50 g
butter
50g + for greasing the mould
sugar

Put the chicken breast fillet, peeled carrots, washed but unpeeled onion, bay leaf, a few peppercorns and salt to taste in a saucepan. Cover with water and cook until cooked through for about 20-25 minutes after boiling, or longer if you want a richer stock. To make the fillet juicier, half of the breast fillet can be replaced with thigh fillet.

While the chicken cooks, make the béchamel sauce. To do this, pour flour into the ladle, put the butter and heat, constantly stirring the whisk so that the butter melts and there are no lumps. Pour in a thin stream of hot milk, stirring all the time so that there are no lumps. Finish with a pinch of salt, sugar and nutmeg. Stir again with a whisk until smooth.

Grind the boiled fillet with a blender. You can add a little broth in which the fillet was cooked for better grinding and more juiciness.

Add the bechamel sauce and grind everything together until smooth. Add the eggs and mix thoroughly again until combined.

Grease a baking dish, put the prepared soufflé base, level and bake in an oven preheated to 180 ℃ for 20-25 minutes.
