If you want some special soup, cook Georgian chihirtma. It is based on rich chicken broth, from vegetables - only onions, while the soup is amazingly tasty! If you love dishes with sourness, respect cilantro, this recipe is for you.

Recipe " Chikhirtma"
Ingredients for 10 servings
grain-fed chicken
1 carcass
onions
2-3 pcs.
eggs (yolks only)
2 pcs.
flour
70 g
water
100 ml
cilantro
bunch
butter
10-15 g
garlic
2-3 cloves
lemon
1.5-2 pcs.
salt
to taste

to taste
Step 1/6
Rinse the chicken, put in a large saucepan, cover with water and boil until it begins to separate from the bones, for 1.5 hours or more, if necessary. There is no need to put salt, spices, onions, or any other ingredients at this stage. Cool down. Finely chop the onion. Preheat the pan, pour 1 tbsp. l. vegetable oil and put 10-15 g of butter, put the onions and fry until golden for about 7 minutes, stirring occasionally.

Mix flour with a whisk with 100 ml of water, add yolks, mix.

Pour in the juice of the lemons and stir again. You should get a mixture that resembles a pancake batter in consistency.

Separate the chicken from the bones, cut the meat into pieces and put in the broth. Add the fried onions.

Strain through an egg mixture sieve to remove the lemon pits if accidentally hit and add to the stock as well.

Salt, pepper to taste. Stir and bring to the boil. When serving, add the garlic passed through the press and a generous portion of chopped cilantro to the plate.
