eggplants

sorrel
50 g
mozzarella
80 g
sun-dried tomatoes
120 g
lime juice
1 tsp
olive oil
1 tsp
salt
to taste

Step 1/4
Slice the aubergine into medium-thick slices. Brush the slices with olive oil and fry on both sides in a frying pan.
Step 2/4
Shred sorrel and dried tomatoes, grate cheese and mix everything in a bowl.
Step 3/4
Place the resulting filling on an eggplant slice, twist into a roll, salt on top and drizzle with lime juice.
Step 4/4
Serve garnished with your favourite greens.
