Eggplant like mushrooms is an interesting and simple snack that can be prepared for both a regular dinner and a holiday. The classic recipe uses a stock cube. We came up with an alternative - with our dry vegetable broth, which contains only vegetables, spices and salt, and a small amount of aromatic dried mushrooms.

Ingredients for 4 servings

eggplants

onions
1 pc.
eggs
2 pcs.
vegetable oil
3 tbsp. spoons
dried white mushrooms
several pieces
dry vegetable broth
1 tsp
salt
1/4 tsp or to taste
ground black pepper
pinch or to taste

Wash the eggplants, cut off the stalks, clean with a peeler.

Cut into roughly 2x2cm cubes.

Break the eggs into a bowl, shake slightly with a fork.

Add the aubergines and stir.

Peel the onion and cut into medium pieces. Grind a few dry mushrooms (you can crush them in a spice mortar) and add to the aubergines. Pour in the dry vegetable stock.

Preheat pan with vegetable oil. Put the eggplants in it and cook over medium heat for about 5 minutes, stirring occasionally. Then add the chopped onion, salt and stir.

Add a pinch of coriander, if desired. Pepper it. Stir again. Cook the aubergines over a medium heat, stirring occasionally, for 25-30 minutes, until golden and tender.
