Recipe "Duck with apples"

Step 1/5
Transfer the duck to the fridge about a day before cooking to slowly defrost. Wash the duck, dry it, check for feather residue, remove with tweezers if necessary. Cut the apples into wedges.

Combine honey, soy sauce and hot pepper and coat the resulting mixture with duck inside and out. Put the apples inside the duck, tighten the edges of the hole and secure with toothpicks.

Place the duck in the casserole sleeve or in the duckling, breast side down. Tie the sleeve, cover the duckling. Put the duck in the oven and cook at 170 ° C for about 2.5-3 hours.

At the end of cooking, you can remove the lid/tear the bag and brown the duck under the grill at 200 ° C for 5-10 minutes.
