Recipe "Christmas cupcake (vegetarian version)"

Ingredients, serves 8

Wheat flour/s
300g
Creamy coconut drink
50 ml
Coconut sugar
120 g
Coconut oil
170 g
Dried pecan
30 g
Cranberry dried
150 g
Pitted prunes
200 g
Fresh dates with bone
120g (peeled)
Juice and zest of 1 orange
Chocolate Bitter
30 g
Tea and coffee spice mix
1-2 h l
Oat syrup (you can take any syrup to taste, maple, date, Jerusalem artichoke, chicory, etc.)

Step 1/7
Preheat the oven to 170S.
Step 2/7
Peel the dates, cut into small pieces, and cut the prunes and nuts.
Step 3/7
Combine nuts, prunes, cranberries, dates, sugar, chocolate, syrup, zest and orange juice in a saucepan. Heat, stirring, before the chocolate melts, remove from the heat.

Add the flour and coconut oil to the pan, stir until smooth.
Step 5/7
Dilute the Creamy coconut drink with water to make 130ml of milk. Add to the pan and stir. You get a thick sticky dough.

Put the dough in a cupcake tin, flatten and bake for about 45 minutes about the 170S, check readiness with a toothpick.

The muffin can be decorated to taste with berries, citrus fruits, powdered sugar (after cooling).
