Thaw the seafood cocktail in advance in the refrigerator or in a container with cold water, without opening the package. Rinse and dry the thawed seafood.

Make the béchamel: fry the flour with butter and sugar until golden and lightly nutty, stirring constantly. Pour in the milk and cook until thickened, add salt and nutmeg. Cool the finished bechamel.

Melt the butter in the pan, add the crushed garlic clove and quickly fry the seafood (no longer than a minute).

Arrange the cocktail in cocotniks, pour over the béchamel sauce, sprinkle with grated cheese. In this form, the julien can be put in the refrigerator and stored for a day. Before serving, put the cocotniks in a hot oven and bake at 210C until the cheese melts, about 5 minutes.
