lemon juice

Separate the yolks from the whites.

Pour milk into the yolks and pour in the flour. Mix until homogeneous - the mass should be viscous.

Add sugar and lemon juice to a bowl of proteins. Beat the whites to firm peaks.

Carefully introduce the whipped proteins into the mixture of yolks, milk and flour. Stir the dough.

Preheat the pan and grease it with oil. Lay out the dough, forming the pancakes. Then add a little water (a little less than 1 teaspoon) to the pan, without touching the pancakes, and close the lid. Fry for 2-3 minutes over medium heat.

Turn the pancakes over and fry for another 3-4 minutes under the lid.
