Bring to a boil and cook over medium heat to a "soft ball" state (if you have a culinary thermometer, then to a temperature of 115-117 ℃) and caramel color. How to sample a soft ball: scoop up a small amount of syrup with a spoon and pour into ice water. If the syrup has reached the desired temperature and consistency, in this case it will turn out to roll a soft, pliable ball, similar to plasticine.
