Pea puree is a forgotten but wonderful alternative to potato puree. There are only four simple ingredients - dry peas, water, salt and butter - and it turns out very tasty. It is important to choose fresh peas, last year's may not boil well, and then the ideal peas will not work.

Ingredients for 4 servings
dry crushed peas
100 g
butter
30 g
water
250 ml
salt

Step 1/6
Rinse the peas under cold water and soak them overnight in plenty of water. Drain the water in which the peas were soaked. Flush with clean water.

Put the peas in a saucepan, add a glass of water, but do not salt .

Bring to a boil, then lower the heat to medium and cook until soft (about 30-40 minutes).

When the water is absorbed and the peas are soft, add the butter and salt.

Mash everything with a pusher or immersion blender. You can grind the peas into a smooth puree or leave a coarser structure.

Serve the pea puree hot, sprinkled with fresh herbs. Peas can be eaten as an independent dish or as a side dish, served with fried mushrooms, vegetable stew or baked low-fat meat.
