For this recipe, it is better to take tuna in oil, but you can also in your own juice. Drain the oil or liquid (if you have tuna in your own juice) and put the pieces in a blender bowl. Add the capers, Dijon mustard, lemon juice, mayonnaise and a pinch of black pepper. You can also add a teaspoon of soy sauce, half a teaspoon of Worcester sauce and a pinch of powdered sugar if you wish.

Crush the garlic with a knife. Preheat the pan and put the garlic, thyme and tenderloin in it. Cook over a high heat for about 4 minutes on each side to seal all the juices.

Wrap the meat in foil and cook in the oven preheated to 180C for 5-10 minutes. Then remove and leave to "rest" in foil for about 15 minutes. If you like medium roasting, you don't have to put meat in the oven. After sealing the juices in the pan, wrap the tenderloin in foil and leave to rest for about 15 minutes.
