Vegetarian meat-free cabbage rolls with mushrooms

Vegetarian cabbage rolls are very tasty, especially if cooked with mushrooms. Despite the fact that there is no meat in them, the taste is very rich. Please note: vegans need to replace classic sour cream with vegan or not use it at all in the recipe.

Recipe "Vegetarian cabbage rolls without meat with mushrooms"
Ingredients for 10-13 servings
Cabbage
1 pc.
Rice "Jasmine "
1 cup
Mushrooms Oyster, 300 g
1 pack
Carrots
1 pc.
Onions
1 pc.
Ginger
1 tbsp. spoon
Garlic
2 cloves
Salt, black pepper, bay leaf
For the broth sauce:
Tomato paste
2 tbsp. spoons
Sour cream 15%
2 tbsp. spoons
Step 1/6
Pour a glass of rice over a glass of water and boil for 10 minutes, until all the water has been absorbed. Rice should not be completely ready, but slightly undercooked.
Step 2/6
Soften cabbage leaves for cabbage rolls in the microwave. Remove the top of the bump, put the cabbage in a bowl and cover with cling film. Put in the microwave at full power for 5 minutes. Carefully remove (dishes and cabbage will be hot), remove the upper leaves, which have become soft. If hard leaves remain, return them to the microwave for a few more minutes.

While the rice and cabbage are cooking, make the filling. Finely chop the onion, mushrooms, garlic and ginger. Grate the carrots on a fine grater. In vegetable oil, fry the onions, garlic and and ginger for a couple of minutes, add the carrots and mushrooms and fry for about 10 minutes, stirring, over medium heat. Add the rice, stir and remove from the heat. Salt the filling to taste.

Remove the hard part from the cabbage leaves, cut them in half. Wrap a tablespoon of the filling in each sheet.

Fold tightly into the pan (you can add a few remaining leaves to the bottom). Next, you can pour plain water or prepare a sauce-broth - mix tomato paste and sour cream, dilute in water (about 1 liter or a little more to completely cover cabbage rolls).

Pour the cabbage rolls with water or sauce, add bay leaf, salt generously and add black pepper to taste. Bring to a boil and cook for 20-25 minutes over low heat.
