The recipe for our vegetarian okroshka is not quite ordinary. Of course, there is no meat and eggs in this cold soup. But there is... cheese. Try it, it turns out a very tasty combination .

Recipe "Vegetarian okroshka"
Ingredients for 3-4 servings
ayran 2%
400 ml
cheese "Adygea" light
90 g
short-fruited cucumbers
100 g
fresh radish
90 g
Hass avocado
1 pc.
young potatoes
150 g
greens (onions and dill )
2 tbsp. spoons
mustard "Canteen"
2 tsp
salt, black pepper
to taste
vegetable oil
for roasting potatoes
Step 1/5
Preheat the oven to 180C. It is advisable to take smaller young potatoes. Rinse, lightly scrape the peel with a knife where it easily comes off. Cut small tubers in half or into quarters. Sprinkle lightly with salt, black pepper and drizzle with oil. Set to bake on parchment for 25-30 minutes (check readiness in 25 minutes and, if necessary, bake more, the time depends on the size of the potatoes).

Cut the avocado in half, set aside one half. Mash the other half with a fork in a bowl, add mustard, salt, pepper and finely chopped greens there. Mix everything thoroughly and leave to serve.

Dice the remaining avocado half, cucumbers, radishes and cheese. When the potatoes are ready, transfer immediately from the tray to cool faster and chop finely (but not too much.

Arrange the vegetables and cheese on plates, add the mixture of avocado with mustard and herbs.

Fill with cold ayran.
