The most gentle way to keep sea buckthorn for the winter is to wipe it with sugar and not cook. You will get the so-called "live jam," in which the maximum vitamins will remain. This delicate sea buckthorn puree can be eaten just like that, watered with cottage cheese and casseroles, used as a blank for sea buckthorn tea or pie filling.

Recipe "Sea buckthorn jam without cooking "

Ingredients

fresh sea buckthorn
250 g
sugar
250 g
Step 1/4
Go over the sea buckthorn, wash and dry. It is important to remove all bad berries, especially crushed ones, as they risk sour the finished jam. Of course, if you cook a very small volume of sea buckthorn jam, everything is not so critical. But if you think about making a can or two, for the whole winter, this is a very important point.

Step 4/4
Sterilise the tin in the oven, microwave or stove over steam. Dry so there is no moisture left on it. Put sea buckthorn with sugar in a sterilized jar and close the lid. Jam ready. Such live sea buckthorn jam must be stored in the refrigerator. It has little sugar so that it does not deteriorate at room temperature. With long storage, jam can stratify, but there is nothing wrong with that. It is enough to mix - and a pleasant appetite.
