Punch spinach in a blender along with mint.

Beat the eggs until fluffy.

Knead the dough from spinach mass, flour, baking powder, spices, cottage cheese and eggs.

Preheat the waffle iron and grease with oil. Bake the waffles for about 6 minutes.

For the poached egg, boil the water in a small saucepan or saucepan. Reduce the heat to low and add a little vinegar or salt - this will help the protein to grip better. Gently break the egg into a small bowl or cup. Using a spoon, create a funnel in boiling water, stirring it clockwise. Slowly pour the egg into the center of the funnel. Cook for 3-4 minutes until the protein has set. Remove the egg with a slotted spoon and leave to drain with excess water.

Serve the finished waffles with a spoonful of strachattela, slices of salmon and a poached egg.
Tip: cool the waffles before freezing, wrap them in cling film and put them in a zip bag. So they can be stored for up to 1 month. Stick a date sticker on the bag so you don't forget about them. The waffles should be thawed in an oven preheated to 170 ° C for 7-10 minutes.
