Pumpkin Pie Recipe

Step 1/9
Fold the pumpkin flesh into a heatproof tin, cover and bake in the oven at 180 degrees until tender (about half an hour). Puree the finished pumpkin in a blender, after draining the excess liquid. Such pumpkin puree is stored in the refrigerator in a closed jar for 2-3 days, and frozen even longer, so that it can be prepared in advance.

For the dough, put both types of flour and salt in a blender bowl, add ice butter cut into pieces (from the freezer), scroll in the blender to a large crumb, then pour in cold water and turn on the blender for a few more seconds - you should get a heterogeneous dough .

Grease a baking dish (24cm or a little more) and sprinkle with flour. Quickly roll the dough into the layer and distribute it in shape, make neat sides with a fork.

Put the dough in the fridge for half an hour to an hour or in the freezer for 15 minutes.

Preheat the oven to 200 degrees. Often prick the dough with a fork and bake (you can with a load) for 15 minutes.

Measure 400 ml of pumpkin puree (you can make soup or pancakes from the leftovers), mix with condensed milk and spices, beat with a mixer until smooth.

Beat the eggs into a lush foam and mix with the pumpkin. If the filling seems too thin, add a teaspoon of rice or coconut flour.

Pour the filling into the tin, bake for 10 minutes at 200 degrees, then reduce the temperature to 180 degrees and bake for about 50 minutes more.

Let the finished cake cool completely, transfer to a beautiful dish, you can decorate with powdered sugar.
