Recipe "Curd stollen"
Ingredients for 10-15 servings
wheat flour, v/s
500 g
butter
200 g
curd 18%
200 g
cane sugar
200 g
chicken eggs
2 pcs.
light raisins
100 g
cranberries cured
50 g
fried almonds
100 g
orange
1 pc. (zest)
baking powder
20 g
icing sugar for garnish
2 tbsp. spoons
Step 1/5
Soak raisins and cranberries in advance in strong alcohol or before starting cooking in a small amount of strong tea. Roughly chop the almonds with a knife.
Step 2/5
Beat the softened butter with sugar with a mixer until smooth, then add the eggs and beat until creamy. Add the curd and continue whisking at high speed.
Step 3/5
Add the sifted flour with baking powder, stir, then add nuts, raisins, cranberries, grate orange zest and stir into the dough on low speed. Leave the dough for 20-30 minutes.
Step 4/5
Roll the dough gently into a rectangle with rounded edges, slightly squeezing in the center with a rolling pin to make the edges thicker, and fold in half, forming a "bar." Transfer the stollen to the parchment and bake for about 40 minutes at 180 ° C, then lower the temperature to 160 ° C and bake for another 40 minutes. If the top starts to blush, cover it with a sheet of foil.
Step 5/5
Grease hot stollen with butter and sprinkle with powdered sugar.
