Step 1/9
Put the dough to thaw according to the instructions on the package. Make the cream. To do this, pour starch, sugar and salt into a large bowl or bowl of a mixer, mix until smooth.

Add the egg yolks and beat with a mixer until the mixture is light and slightly bulky.

Pour milk into the ladle, add vanilla extract, after shaking the bottle. Stir and heat the milk over medium heat until steam appears above the surface, you do not need to bring to a boil! If you do not have vanilla extract, you can use 2 tsp. Vanilla sugar - add it at the stage of combining with starch and salt, reducing the amount of ordinary sugar, respectively.

Remove the vanilla milk from the stove and gradually pour into the egg mixture in small portions, stirring constantly with a spoon, spatula or hand whisk. You don't need to pour everything in right away - otherwise the yolks will immediately boil, and you get something like an omelet. No need to beat. Just stir until smooth.

Return the mixture to the ladle and heat over a medium-low heat, stirring constantly with a whisk. As soon as the cream thickens, remove from the stove, add butter and mix until completely dissolved and smooth. Transfer the cream to a bowl and cover with cling film in contact - so that it completely touches its surface. Cool to room temperature and refrigerate for at least 1 hour.

Cut the thawed puff pastry into 8 identical squares. If necessary, roll out a little beforehand (strictly in one direction, so as not to damage the structure). It is important that the squares are even and the same size.

Whisk the egg with the milk. With this mixture, brush half the square of the dough diagonally and fold so that you get a triangle, the bottom can protrude a little. Brush again with egg and milk. Press the edges of the triangle slightly to prevent it from opening when baking. Repeat for all squares.

Bake the puffs in an oven preheated to 200 ° C for about 20 minutes, or until the triangles are golden. Cool down.
Step 9/9
In each triangle, make an incision, fill the puff with cream and decorate with your favorite berries to taste. Sprinkle with icing sugar, if desired.
