Traditionally, Pavlov's cake is made with whipped cream, but the combination of the tender melted taste of katyk and fresh aromatic raspberries is amazing! Add crispy meringue, and such a cake will become a real decoration of the summer holiday. Do not replace katyk with ryazhenka - the latter has a more sour taste and liquid consistency. Meringue can be prepared the day before, and half an hour before serving the cake, just fill it with cream and berries.

For the meringue, take a large clean dry whisk bowl and a mixer or whisk blender (blender knives won't do!). Preheat the oven to 130 degrees and prepare a baking sheet - line it with baking paper, draw a circle on it about 20 cm in diameter.

Carefully separate the whites from the yolks (the yolks will not come in handy). Beat the whites at the maximum speed of the mixer, first the mass will increase greatly in volume, then it will become denser, beat until firm peaks, then add sugar and continue to beat until the mass becomes dense and shiny.

Put the finished mass on paper in a drawn circle, forming a basket.

Put the tray in the oven, bake for about an hour, then turn up the temperature to 170 degrees and hold for another 5 minutes. The finished basket is dry and easily separates from the paper.

Cool the meringue to room temperature, put katyk in the middle, and raspberry berries on top. Bon appetit!
