Cut carrots, celery and onions into cubes, crush garlic with a knife blade and cut medium. Heat olive oil in a pan (you can immediately start cooking in a saucepan if there is a saucepan with a thick bottom, suitable for frying).

Fry onions, carrots, celery over medium heat to soften and brown slightly, literally 3-4 minutes, stirring occasionally. Add garlic, fry for another minute, stirring. Add ground coriander, paprika, dried parsley, mix.

If cooking in a pan, transfer the roasted vegetables to a saucepan. Add tomato paste and tomatoes from a jar, pour vegetable broth (cooking recipe here), season with salt and pepper. Bring to a boil, reduce heat and cook for 10 minutes.

Add the thinly sliced cabbage and cook for a further 10 minutes. Try for salt, if necessary, salt.

Tomato soup with cabbage is ready, you can serve it simply as a vegetable soup, or you can put ready chickpeas or pre-boiled lentils at this stage. When serving, add lemon juice to the soup.
