Ingredients for 2 servings

1 pack (125 g)
parisienne salad mix
1 pack
arugula
1 pack
sesame oil
2 tsp
soy sauce
1 tbsp. spoon
mustard
1 tsp
ginger
1 cm root
honey
1 tsp
garlic
1 clove
thyme
1 sprig

Step 1/8
Dry the duck breasts, cut the skin with a sharp knife crosswise.
Step 2/8
Squeeze the juice from one orange and mix with soy sauce, pour half of the mixture into a small jar, this is a future dressing.

Squeeze the garlic into the remaining mixture, add the grated ginger, mix.

Pour this marinade over the duck breasts, leave them for half an hour at room temperature or refrigerate for a few hours.

Add sesame oil, honey and mustard to the mixture in a jar, shake well, keep the dressing in the refrigerator until served. Peel the remaining orange and cut into wedges.

Dust the duck breasts from excess marinade, salt on the skin side and put on the cold pan with the skin down, fry over medium heat until the skin is brown, then salt the top and pour over the melted fat. Slightly reduce the heat and bring the breast to readiness, without turning, about 15 minutes, the middle should remain pink. Place the breast on a plate with the skin up, cover with a sheet of foil, keep warm.

In a saucepan, boil the water and quickly blanch the asparagus, after half a minute transfer it to cold water.

Cut the breast into slices, put lettuce and rocket on the leaves, add orange and asparagus, season the salad with a jar mixture. Serve warm.
