Tartlets are a great solution for the festive table: they cook in a matter of minutes, look smart, and the filling can be anything. For example, fried eggplant with cottage cheese and pesto, as in our recipe. Ingredients for 4-5 servings :

curd cheese
1 pack (140 g)
pesto sauce
60 g
pine nuts
20 g
eggplant
1 pc.
vegetable oil for frying
100 ml
parsley
a few sprigs to garnish
salt
to taste
pepper

Step 1/5
Cut the eggplant into circles about 8-10 mm thick. Salt and pepper to taste. Fry the vegetable until golden brown in a well-warmed pan with vegetable oil.

Put the finished eggplants on a paper towel to remove excess fat.

Cut the cooled aubergines into a medium cube.
Step 4/5
Spoon about a teaspoon of curd cheese into each tartlet, followed by the aubergine and some pesto.

Garnish the tartlets with lightly seared pine nuts and parsley leaves.
