Celery makes the soup with meatballs thicker, richer, turning the usual dish into a new one. And, mind you, there are no potatoes in our version.

Recipe "Soup with meatballs and celery"
Ingredients for 6 servings
celery root
600-700 g
pork and beef meatballs
300g
onions
1 pc.
garlic
2 cloves
parsley
bunch
lemon
0.5 pcs. (juice )
allspice
a few peas
bay leaf
2 pcs.
salt
to taste
olive oil
1 tbsp. spoon
water
1.5 litres
Step 1/7
Peel the onion and garlic. At the celery, peel off the skin with a vegetable peeler or knife.
Step 2/7
Finely chop the onion and garlic and fry until transparent in a saucepan in which you will cook the soup, in olive oil.
Step 3/7
Cut the celery into medium slices, add to the pan, pour about 1.5 liters of water. Bring to a boil and cook until celery is soft (about 20 minutes).

Mash the celery in a coarse puree using a pusher.
Step 5/7
Bring the soup to a boil, add the meatballs and cook for about 10 minutes more until tender.
Step 6/7
At the end, squeeze half a lemon into the pan.
Step 7/7
Serve the soup hot, sprinkled with chopped parsley.
