Peel asparagus, removing thin strips of peel somewhere from the middle of the stem down, cut off the hard ends, tie the stems in a bunch.

In a tall saucepan, boil the water and place the asparagus there so that the tops stick out over the water, cover with a lid - this way the tougher stems will cook and the tender tops will steam.

Cook in boiling water for about 5 minutes, asparagus should turn out to be not overcooked, slightly crispy, immediately transfer it to a container of ice water, so you keep the bright green color of the shoots. Serve warm asparagus with sauce.
