Recipe "Scandinavian scallop soup"
Ingredients for 10 servings
combs
300g
salmon soup kit
1 pack (1 kg)
large white onion
1 pc.
small carrots
1 pc.
garlic
2 cloves
cream 30%
1 bottle
parsley
a couple of twigs, leaves only
potatoes
3 pcs.
vegetable oil
2 tbsp. spoons
salt
to taste
white pepper
1/4 tsp
water
2 L
Step 1/12
Defrost the scallops.
Step 2/12
Pour vegetable oil into a saucepan and put the head and fillets of fish on the bones from the soup set in it. Boneless fillets will be needed later. Fry for about 10 minutes.
Step 3/12
Carefully remove the boneless fillet from the skin with a knife.
Step 4/12
Cut the fish into pieces.
Step 5/12
Cut half the onion into cubes and put in a saucepan with the head and bones of the fish, along with the other, uncut, half. Peel the carrots, dice and also put in a saucepan.
Step 6/12
Chop the garlic into large pieces and add to the fish with vegetables. Fry everything together for 2-3 minutes. Gently stir to prevent the bones from falling apart.
Step 7/12
Pour 2 litres of water over the ingredients. After 15 minutes, remove the large bones, fish head and onion from the pan. Once the bones have cooled slightly, separate the fillets from them and place in the soup.
Step 8/12
Peel the potatoes, cut into cubes and add to the soup after it boils.
Step 9/12
Pour over the cream and bring to a boil.
Step 10/12
Add the chopped salmon fillets and scallops. Let boil again and cook for 5 minutes.
Step 11/12
Cut parsley and put in soup, pepper. In total, cook the dish for 45-50 minutes.
Step 12/12
Serve garnished with parsley.
