Shurpa is the perfect winter warming lunch, both first and second. The magnificent shurpa soup in terms of the number of ingredients included in it can rightfully be considered a full two-course lunch. In Ayurvedic literature, soup is the basis of the diet, since it perfectly saturates and warms what is necessary in our climate to maintain a "digestive fire."

Recipe "Lamb Shurpa"
Ingredients for 5 servings
lamb loin
500 g
chopped tomatoes
400 ml (can)
bell peppers
2 pcs.
carrots
1 pc.
onions
2 pcs.
potatoes
3-4 pcs.
strong sour apple
1 pc.
cilantro
large bundle
meat seasoning
1 tsp
cumin
½ tsp
salt
Step 1/3
Pour 2.5 liters of water over the loin, bring to a boil, remove the foam, reduce the heat to a minimum, add spices, salt and one onion cut into half rings, cook for about half an hour.
Step 2/3
Peel and roughly chop the potatoes, carrots and peppers, add to the broth when the potatoes are ready, add the chopped tomatoes.
Step 3/3
Cut the second onion into thin-thin semi-rings, apple into wedges, add to the soup, bring to a boil, boil for a minute and turn off. Put the meat and vegetables on a dish, sprinkle with fresh cilantro, pour the broth over the bowls. Bon appetit!
