Chocolate roll, or Christmas log, is the perfect dessert for the New Year's table. The combination of cherries and chocolate and the delicate buttercream inside is a classic!

Ingredients for 4 servings
For the test:
wheat flour, v/s
60 g
starch
30 g
cocoa
50 g
chicken eggs
4 pcs.
butter
30 g
sugar
100 g

For the filling:
mascarpone
1 pc (250g)
cream 30%
1 pc (190g)
freshly frozen cherries
1 pack (300 g)
sugar
3 tbsp. spoons
icing sugar
1 tbsp. spoon
fresh berries to garnish

Step 1/8
Melt the butter and leave to cool to a comfortable hand temperature. Defrost the cherries.
Step 2/8
Beat the eggs with sugar until thickened. Sift the flour with cocoa and starch, gently mix with the eggs using a spatula, add butter and mix.

Line a baking sheet with baking parchment, pour out the dough and spread over the paper. Place in an oven preheated to 190C for 10 minutes. Gently roll up the hot cake and cool for about 30 minutes.

Mix 50ml water with 3 tbsp sugar and bring to the boil. You can add a spoonful of aromatic strong alcohol to the resulting syrup, ideally cherry kirsch or homemade cherry tincture. Soak the resulting syrup with the cooled cake.

Whisk the cream with the mascarpone, adding a dollop of icing sugar.

Carefully unwrap the roll, spread with cream and arrange the cherries.

Wrap the roll and garnish.

You can spread the roll with the remaining cream (for this, take 2 jars of mascarpone), or you can pour melted chocolate.
