Chocolate-beet cake recipe
Ingredients for 6-7 servings
85% bitter chocolate
200 g
chocolate bitter 58%
50 g
raw beets
250 g
chicken egg S1

vegetable oil

Step 1/10
Peel and grate the beets or punch in a powerful blender. If the beets are juicy enough, squeeze slightly and drain the juice.

Melt the cake chocolate in a water bath or microwave, but be sure to stir carefully so as not to overheat in the process. Chop almonds with a knife.

Beat eggs and sugar at high speed with a mixer into a lush light mass.

Add the flour, salt and almonds sifted together with the baking powder, mix.

Add the beets, melted chocolate and vegetable oil, gently mix again with a spatula, pour into a baking dish with a diameter of 20-22 cm.

Place the tin in an oven preheated to 170C on a medium level for about 50 minutes. Cover the tin with foil to prevent the top from burning. Check readiness with wooden skewer.

Cool the finished cake in the mold for about 10 minutes, then remove to a wire rack and leave to cool completely.

Melt the remaining chocolate in a water bath, stirring, remove from the heat. Beat sour cream at room temperature with powdered sugar, add melted chocolate and beat again with a mixer.

Pour the resulting glaze onto the cake and spread with a spatula or spoon over the surface.
