Chocolate Glaze Recipe

For a water bath, select two containers (bowls or pots) so that the bottom of the upper bowl does not touch the bottom of the bottom. In the lower bowl, the water should not boil much, otherwise the spray will fall into the upper bowl, which is unacceptable.

Break the chocolate into pieces and put in a saucepan. Add vegetable oil and place in a water bath. Heat and stir constantly to melt the chocolate but not overheat.

Remove the chocolate from the water bath, add the cream at room temperature and stir vigorously. As a result, the mass should become glossy and uniform. If the glaze is too thick, you can increase the amount of cream.

Cover the finished glaze with cling film directly into contact (so that the film "lies" on the glaze) and cool slightly. Once the temperature drops slightly, use a glaze.

Pour over the cake or transfer to a cornet and draw chocolate patterns over a white protein glaze.
