Beet

Green beans
150 g
Walnuts
handful
A few sprigs of cilantro
Lemon juice (for dressing)

Olive oil

Step 1/4
Wash the beets, drizzle with olive oil, wrap in foil and bake in the oven until tender (half an hour to an hour for young beets).
Step 2/4
Sort the beans, cut the tails, cut each into 2-3 parts, blanch in boiling water for a minute, put on a plate.
Step 3/4
Make the dressing by mixing the olive oil with the lemon juice, salt and pepper, whisk with a fork.
Step 4/4
Peel the baked beets, cut into cubes, mix with the dressing, then add the beans and chopped cilantro, mix everything again, sprinkle with walnuts - done!
