Recipe "Salad with rocket and shrimp"
Ingredients for 2 servings
shrimp Royal peeled with tails blanched
250g (1 pack)
arugula
100 g
sun-dried tomatoes
40 g
cherry tomatoes
50 g
capers
10 g (2 tsp)
honey
1 tsp
Dijon mustard
1 tsp
olive oil
2-3 tbsp. spoons
lemon juice
1-2 tsp
salt

Defrost the shrimp, scald with boiling water and let the water drain.
Step 2/5
Cut the cured tomatoes into chunks, halve the cherry tomatoes.

Prepare a salad dressing: mix mustard, salt, lemon juice, honey, olive oil in a bowl and beat with a whisk until smooth. Soak the rocket in water for 5 minutes and dry.

Place the rocket on a plate. On top are cured tomatoes, cherry tomatoes, capers and shrimp.

Pour over the dressing and serve.
