Salad with lentils and oyster mushrooms

This salad is prepared in literally 10 minutes if you have boiled lentils. It turns out to be satisfying and may well replace the second course.

Ingredients for 2 servings

mushrooms oyster mushroom

red onion (or shallot)
1/2 pc medium or 1 small
cream tomatoes red

Rukola salad
50 g
soy sauce
1 tbsp. spoon
"Classic" mayonnaise soy sauce
2 tbsp. spoons
garlic
2 cloves
mustard "Canteen"
1 tsp
ground coriander
1 tsp
parsley
1 tbsp. spoon
sunflower oil. highly oleic, glass
2 tbsp. spoons
salt and black pepper
to taste

Boil the lentils until tender (cover with two parts of water and cook for 40 minutes over low heat, drain). Lentils can be boiled in advance (for example, the day before) and left in the refrigerator.

Cut the onion into medium half rings. Cut large oyster mushrooms, leave small ones whole. Heat a tablespoon of oil in a pan, add two garlic cloves and lightly fry in the oil, no more than a minute, take out the garlic and save it for dressing. In the same oil, fry the onions until soft and ruddy for 3-4 minutes, set aside. Add the oils to the pan, fry the oyster mushrooms over a high heat until ruddy, then turn down the heat and fry until tender, 5-7 minutes.

Return the onions to the oyster mushrooms, add the finished lentils, season with ground coriander, add salt, black pepper, soy sauce. Stir and let the flavours combine, remove from the heat.

For the dressing, chop the finely fried garlic, fresh parsley and mix with the mayonnaise sauce and mustard.

Cut the tomatoes into medium wedges. Mix the rocket, tomatoes, lentils with onions and oyster mushrooms. Serve the dressing separately.
