Eggplant Salad Recipe
Ingredients for 2 servings
1 medium aubergine
Cherry tomato sprig
Bunch of purple basil
Greek yogurt

Step 1/3
Cut the eggplant into rounds, salt and leave for five minutes, drain the juice.

Fry the aubergine in vegetable oil (preferably in a grill pan), sprinkle with dry oregano.
Step 3/3
Cut cherry into halves, tear basil leaves with your hands, mix with eggplant, pepper, season with sour cream.
